Oatmeal, chocolate chip, peanut butter cookies.

 In a mixing bowel add

  • 2/3 cup maple syrup
  • 2/3 cup creamy or crunchy natural peanut butter
  • 1/4 cup melted coconut oil (or butter)
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups oats
  • 1 cup whole wheat flour
  • 1/2 cup dark chocolate chips
  • 2 eggs
  • (Optional - 1 banana)
Mix with blender.

Use a spoon and make into tight balls and place onto a flat pan sprayed with oil.

Bake in a preheated oven at 350 degrees for about 12 minutes.

Allow to cool.

You may best enjoy them frozen.

Apple Cinnamon Whole Wheat Cookies with Coconut Sugar

 In a large bowl add

3 cups finely chopped apple

1 tbs cinnamon

1 tsp salt

1 tsp baking soda

1 tsp baking powder

1/2 cup melted butter

1 cup coconut sugar

1 tsp vanilla

2 cups whole wheat flour

1 cup old fashioned rolled oats

1/2 cup unsweetened almond milk

Mix well by hand or with an electric mixer.

Roll dough into balls approximately 1 inch in diameter.

Place into cookie sheets sprayed with oil.

Place into an oven preheated to 375 f

Bake for 12 minutes.

Remove and allow to cool.  If not eaten soon after baking, put into a fridge or freezer for storage.
