Lemon no-sugar ice-cream with vegan option - very good but also tart
Peel 3 large lemons (Not the easiest thing to do. You may want to cut off both ends and then quarter them, and then remove the peel.)
Blend the lemons and place in sealed bag in the freezer.
In a food processor, using the blades add:
1/2 cup mile (or almond milk)
1/2 scoop vanilla whey protein (or pea)
1/2 tablespoon virgin organic olive oil
3/4 to 1 cup of stevia (you may want to adjust for taste)
blend or mix
Add about 1/2 of the frozen lemon and mix or blend well.
Add the other half of the frozen lemon and again mix or blend well.
Carefully scoop out and enjoy
